Pendlebury Fruit Loaf
- 1 cup whole milk
- 12 cup butter (1/4 lb)
- 1 cup sugar
- 1 cup sultana
- 10 candied cherries (quartered)
- 2 cups self rising flour
- 1 teaspoon ground mixed spice
- 1 medium egg, beaten
- 1 teaspoon bicarbonate of soda
- Preheat oven to 350*F (180*C or Gas Mark 4).
- Put butter, sugar, milk, sultanas, and candied (or glace) cherries into a large saucepan.
- Bring almost to the boil over a low heat, stirring occasionally.
- Remove pan from heat and allow to cool for 5 minutes.
- Add 1 cup flour, the mixed spice and the bicarb into the pan and add half the beaten egg, mix thoroughly.
- Now add the rest of the flour and egg and mix again.
- Pour mixture into a paper-lined loaf tin.
- Bake on middle shelf of oven for approx 1 hour.
- Remove from tin and allow to cool on a wire rack.
- Best served cut into thick slices and spread thickly with butter.
