Potato Caesar Salad

  1. Toss potatoes, oil and salt.
  2. Bake in a 200C oven for 30 minutes or until very crisp.
  3. Arrange the cos lettuce and salmon on a serving plate.
  4. Combine the mayonnaise and dressing and drizzle over the salad.
  5. Scatter over the spring onions, prosciutto, cheese, parsley, lemon rind and potatoes.
  6. Serve immediately.
