Santa Fe Cobb Salad
- 1/2 c. chipotle mayonnaise
- 1/4 c. plain, low-fat yogurt
- 1 tbsp. lime juice
- 3 tbsp. Chopped cilantro
- 1/2 tsp. grated lime zest
- 1/2 tsp. salt
- 8 c. romaine lettuce
- 3/4 lb. smoked turkey breast
- 1/2 pt. grape tomatoes
- 3 eggs
- 2 large beets
- 1 ripe Haas avocado
- 1/2 seedless hothouse cucumber
- 1 small orange bell pepper
- 13 c. red onion strips
- 4 strip cooked thick-sliced bacon
- 4 oz. pepper Jack cheese
- Make the dressing: In a bowl, whisk first 6 ingredients until blended.
- Whisk in 2 tablespoons of water to thin slightly.
- Assemble the salad: Line a large platter with lettuce.
- Arrange remaining ingredients, in rows, on top of lettuce.
- Serve with dressing.
