Vegan Pineapple Tofu
- 1 lb firm tofu, cut into triangles
- 1 cup sweet and sour sauce
- 1 cup pineapple juice
- 1 cup pineapple chunk
- 14 cup soy sauce
- Mix all of the ingredients in a ziploc bag.
- Let sit for one hour.
- Pre-heat the oven to 375AF (185AC).
- Put the mix into a casserole.
- Cover with foil.
- Bake for one hour.
- Serve with rice on the side.

- Cover with casserole cover (not with foil or plastic).
- Let sit for one hour at room temperature.
- Pre-heat the oven to 375AF (185AC).
- Put covered casserole into pre-heated oven and bake for one hour.
- Serve with rice on the side.
