Zucchini Noodles with Tomato Sauce and Shrimp

  1. Using a knife, chop the ends off the zucchini.
  2. Cut the zucchini in half lengthwise.
  3. Using a spiralizer fitted with a shredder blade C, spiralize the zucchini.
  4. Use kitchen scissors to trim off the noodles as they come out.
  5. If you dont trim them, your noodles will be very long.
  6. I prefer to trim because theyre easier to eat.
  7. Set the noodles aside.
  8. In a large saute pan heat olive oil over medium-high heat.
  9. Add shrimp, salt and pepper.
  10. Stir occasionally and cook until shrimp is pink on both sides.
  11. Remove it from the pan and set aside.
  12. In the same pan add garlic, onions and red pepper flakes.
  13. Cook until onions are gold brown.
  14. Add the zucchini noodles and cook, about 3 minutes.
  15. If you cook them more than that the zucchini can be a little soggy.
  16. Dont forget to stir occasionally.
  17. When the zucchini noodles are ready, split between two plates, top with warm tomato sauce, shrimp and cherry tomatoes!
  18. Enjoy your meal!
