Spicy Chicken Salad

  1. Preheat the broiler.
  2. In a small bowl, combine the chile powder with the cumin, coriander and 1/2 teaspoon of salt.
  3. Coat the chicken breasts with the spices.
  4. Lightly coat a broiler pan with olive oil cooking spray, then set the chicken breasts on it.
  5. Broil the chicken for about 4 minutes per side, or until cooked through.
  6. Transfer the chicken to a cutting board and let cool, then slice on the diagonal into 1/3-inch strips.
  7. In a large bowl, toss the spinach with the tomatoes, scallions, avocado and radishes.
  8. In a small bowl, whisk the yogurt with the olive oil, lemon juice and garlic and season with salt and pepper.
  9. Pour the dressing over the salad, add the chicken and toss well, then serve.
