Easy Oni-Manjuu (Ogre Dumplings) Using a Silicone Steamer

  1. Peel the sweet potato, and cut into cubes.
  2. To remove the bitterness, prepare a bowl of water (not listed), and add the (1) salt.
  3. Soak the sweet potato in the bowl of water.
  4. Drain, rinse under running water, and drain again really well.
  5. Coat the sweet potato with sugar in a bowl.
  6. If the sugar is really grainy, add a little water.
  7. Leave the sweet potato for about 5 minutes to let it absorb the sweetness.
  8. Add the plain flour into the bowl, and mix.
  9. Add water while adjusting the consistency of the batter.
  10. Add the (2) salt to enhance the sweetness.
  11. Adjust the amounts of flour and sugar depending on the size and sweetness of the sweet potato.
  12. If you like it nice and chewy, it will be the best if you make the batter rather thick like okonomiyaki batter.
  13. If you like it rich and dense, make the batter firm enough to form peaks.
  14. Pour the batter into a silicone steamer, microwave for 7 minutes at 600 W. After microwaving, let it steam for 3 minutes and it's done.
  15. Twist the silicone steamer to remove the cake onto a sheet of aluminum foil.
  16. Cut into bite-sized pieces, and it's ready to serve.
  17. If you cut it horizontally, you can hold it in the aluminum foil, and it's easy to eat.
