Salmon Burger Sandwich

  1. Mix salmon, red peppers, onions, eggs, mustard and crackers in large bowl.
  2. Shape mixture into eight patties.
  3. Place in single layer on baking sheet; cover.
  4. Refrigerate 30 min.
  5. Meanwhile, mix mayo, juice and ground red pepper in small bowl; cover and refrigerate until ready to use.
  6. Heat large nonstick skillet sprayed with cooking spray on medium heat.
  7. Add patties; cook, in batches, 4 min.
  8. on each side or until golden brown on both sides.
  9. Fill buns with lettuce, tomatoes, patties and mayo mixture.
