Grilled Spinach, Pepper Jack and Bacon

• 8 slices multigrain bread
• 2 tablespoons butter
• 12 cup basil pesto
• 8 slices cooked bacon
• 4 slices monterey jack pepper cheese
• 1 12 cups baby spinach leaves

1. Bush one side of each slice bread with butter.
2. Spread tops of bread slices with pesto.
3. Top with bacon, cheese and spinach.
4. Grill 3-4 minutes or until golden and cheese is melted.
