Stuffed Celery
- 1 cup low fat cottage cheese
- 14 cup scallion, chopped
- 2 teaspoons lemon juice
- 12 teaspoon soy sauce
- 1 teaspoon prepared mustard
- 14 cup chopped pimiento
- 14 cup fresh chives, chopped
- 1 garlic clove, minced
- 6 celery ribs
- Place all ingredients except celery in a food processor or blender.
- Process until smooth.
- Stuff celery with cheese mixture.
- Cut into bite sized pieces.
