Homestyle Breakfast Burritos
- 12 lb sausage (your choice) or 12 lb bacon (your choice)
- 2 jalapenos, diced
- 1 small onion, diced
- 1 diced tomato
- 12 green bell pepper, diced (or substitute garden banana peppers)
- 3 eggs, scrambled
- 12 cup shredded taco cheese
- 1 small bunch chopped fresh cilantro
- 1 garlic clove, fresh, minced
- 12 teaspoon taco seasoning
- 14 teaspoon salt
- 14 teaspoon black ground pepper
- 14 teaspoon ground cumin
- 4 flour tortillas, shells
- Start the meat browning in a skillet.
- Sometimes I use chopped up bacon and sometimes fresh sausage - both work equally well.
- While that is going dice up the peppers, onions, and tomatoes and then add in to cook with the meat.
- Stir in three eggs and the seasonings, cilantro, and garlic.
- Scramble the eggs in the skillet and stir in with all the other goodies.
- ( I just move the other stuff to the side and cook the eggs in the middle to keep it a one skillet meal).
- Turn off heat when eggs have cooked.
- Warm 4 tortilla shells (20 seconds in microwave), fill with your breakfast goodies and then top them with cheese and salsa, and roll them up to eat.
