Lavender, Honey & Goats Cheese Salad

  1. Select a good, soft, goats cheese (for instance, Catalan garrotxa), and cut into thick medallions.
  2. Pre-heat the oven to 200C and bake the cheese on an oven tray for 10 minutes or until golden, sprinkling each medallion with fresh lavender beforehand.
  3. Remove the goats cheese from the oven and cover liberally in honey.
  4. Serve with plenty of baby leaf salad and chopped vine tomatoes (optional), and drizzle the whole salad with extra virgin olive oil and balsamic vinegar.
  5. Garnish with toasted pine nuts, or cranberries, blueberries, or pomegranate seeds, depending on your preference.
