Chocolate Orange Cheesecake
- Base
- 1 1/2 cups orange cream biscuit crumbs
- 1/3 cup butter, melted
- Filling
- 2 tablespoons gelatine, dissolved in
- 1/4 cup water
- 3 X 250g block PHILADELPHIA Cream Cheese, softened
- 3/4 cup caster sugar
- 3/4 cup natural yoghurt
- 2 oranges, grated rind Safeway 1 lb For $0.79 thru 02/09
- 3 tablespoons Grand Marnier (optional)
- 4 x 55g eggs whites (stiffly beaten)
- 300g dark cooking chocolate, melted
- Topping
- fresh fruit Safeway 1 lb For $1.28 thru 02/09
- chocolate wafer sticks
- icing sugar
- Combine biscuit crumbs and butter.
- Press into the base of a 24cm spring form pan; chill.
- Beat Philly* until smooth, add sugar, natural yoghurt, orange rind, gelatine mixture and Grand Marnier.
- Fold through egg whites and chocolate mixture.
- Pour into prepared crumb crust; chill until firm.
- Top cake with fresh fruit and chocolate wafer sticks.
- Dust with icing sugar.
