Avocado, Corn & Black Bean Salad
- 2 cloves Garlic
- 1/4 Small Red Onion
- 1 Small Jalapeno With Seeds
- 3 Tablespoons Fresh Lime Juice
- 3 whole Limes, Zested
- 1/4 cups Fresh Cilantro
- 1 whole Avocado, diced
- 1 can (14 Oz) Low Sodium Black Beans, Drained
- 3 cups Frozen Corn Kernels, Thawed
- 1 can (14 Oz) Petite Diced Tomatoes, Drained
- Salt And Pepper, to taste
- In a food processor pulse garlic, onion, jalapeno, lime juice and zest until minced.
- Add cilantro and pulse a few times.
- Combine avocado, beans, corn, and tomatoes in a bowl then stir in the lime juice mixture.
- Season with salt and pepper to taste.
