Boysenberry French Toast Recipe
- 1 c. High-quality Boysenberry jam
- 1 x Brioche bread loaf or possibly other loaf bread Dry and day old, cut 16 thin slices
- 1 1/2 c. Lowfat milk
- 1 Tbsp. Vanilla extract
- 1/4 c. Orange liquor
- 1/4 tsp Salt
- 6 x Large eggs
- 4 Tbsp. Melted butter Confectioners sugar Hot maple syrup Lowfat sour cream
- Preheat oven to 350 degrees.
- Spread a thin layer of jam on each slice of bread and mix in half to create sandwiches.
- In a bowl, combine lowfat milk, vanilla, liquor, salt and Large eggs.
- Dip sandwiches into batter and soak briefly.
- Over medium heat, heat a non-stick skillet and heat a Tbsp.
- of the butter.
- Cook the sandwiches in batches, cooking on both sides till golden brown, adding more butter to the pan for each batch.
- Place sandwiches on a platter and keep them hot in the oven till all are cooked.
- Dust with powdered sugar.
- Serve with syrup and lowfat sour cream.
- This recipe yields 8servings.
