Spicy Seared Shrimp on Mardi Gras Rice

  1. Heat 1 tbsp oil in a saucepan over medium-high heat.
  2. Add celery and pepper and cook 2 or 3 minutes.
  3. Add broth, bring to a boil and stir in rice.
  4. Cover, lower heat and simmer 20 minutes.
  5. Turn off the heat.
  6. Stir in peas; cover.
  7. Let stand 5 minutes or until peas are heated through.
  8. Meanwhile, combine salt, garlic powder, cayenne, and thyme in a bowl, then toss with shrimp.
  9. Heat remaining 1 tbsp oil over medium-high heat in a large skillet, add shrimp and cook 4 minutes, turning once.
  10. Divide rice among 4 plates.
  11. Top with shrimp.
