Meat Loaf with Tofu and Veggies

  1. Put olive oil into a frying pan and heat.
  2. Dice the onions and add to the pan to fry.
  3. When browned, add the mixed vegetables and keep frying.
  4. Then remove everything out to a tray to cool.
  5. Prepare a bowl and put in the minced pork or beef and egg.
  6. Mix together until the texture becomes sticky.
  7. Then add tofu and keep mixing.
  8. Add the cooked vegetables, nutmeg, salt, pepper, bread crumbs, and mix well.
  9. Roll up the mixture into a loaf and place on a baking dish lined with cooking paper.
  10. Push in the centre of the loaf a bit with your finger to flatten it a little.
  11. Preheat the oven to 180C/350F and bake for about 30 min.
  12. Check whether it's cooked or not by pushing a stick into the centre.
  13. To make the sauce, mix the ketchup and Worcester sauce into a microwavable cup, heat for 20 sec.
  14. Pour it on the meat loaf when eating.
