Swordfish Caesar Salad Recipe

  1. For Dressing: Mince garlic in blender or possibly processor.
  2. Add in all other ingredients and blend well.
  3. For Salad: Prepare barbecue grill (high heat) or possibly preheat broiler.
  4. Brush 1 Tbsp.
  5. dressing over one side of each steak.
  6. Season with salt and pepper.
  7. Grill fish seasoned side down 6 min.
  8. Brush top with 1 Tbsp.
  9. dressing; season with salt and pepper.
  10. Turn and cook till just cooked through, about 6 min.
  11. Transfer to plate.
  12. Tent with foil to keep hot.
  13. Place lettuce in large bowl.
  14. Fold in remaining dressing, 1 c. cheese, and coarsely grnd pepper.
  15. Taste and adjust seasoning.
  16. Divide salad among plates.
  17. Cut each fish steak into 4 pcs.
  18. Arrange 2 pcs in center of each salad.
  19. Sprinkle 2 Tbsp.
  20. Parmesan and coarsely grnd pepper over each salad.
  21. Serve immediately.
  22. 4 servings.
