Just Peanut Butter Cookies
- 16 ounces, weight Chunky Peanut Butter
- 2 cups Sugar
- 2 whole Eggs
- 2 teaspoons Baking Soda
- 1 teaspoon Vanilla
- Preheat oven to 350 degrees.
- Grease cookie sheets (or cover with parchment paper).
- In a medium bowl, mix peanut butter and sugar until smooth.
- Beat in the eggs one at a time.
- Mix in baking soda and vanilla.
- Roll dough into 1 inch balls and place 2 inches apart on the cookie sheets.
- Press a criss-cross into the top using the back of a fork.
- Bake for 8-10 minutes.
- Allow to cool on the cookie sheet for 5 minutes before removing to a rack to cool.
- Makes 3 dozen cookies.
