Just Peanut Butter Cookies

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheets (or cover with parchment paper).
  3. In a medium bowl, mix peanut butter and sugar until smooth.
  4. Beat in the eggs one at a time.
  5. Mix in baking soda and vanilla.
  6. Roll dough into 1 inch balls and place 2 inches apart on the cookie sheets.
  7. Press a criss-cross into the top using the back of a fork.
  8. Bake for 8-10 minutes.
  9. Allow to cool on the cookie sheet for 5 minutes before removing to a rack to cool.
  10. Makes 3 dozen cookies.
