Not Your Average Granola Bars
- 2 cups rolled oats
- 12 cup raw sunflower seeds
- 1 cup sliced almonds (or your favorite chopped nut)
- 12 cup honey
- 14 cup packed dark brown sugar or 14 cup sucanat
- 2 tablespoons Earth Balance margarine or 2 tablespoons butter
- 2 teaspoons vanilla or 2 teaspoons almond extract
- 12 teaspoon salt
- 12 cup flax seed meal
- 6 ounces chopped dried fruit
- Preheat oven to 350 F and butter an 8x8 or 9x9 inch glass baking dish.
- Spread oats, sunflower seeds and almonds on a cookie sheet to toast in oven for 15 minutes, stirring occasionally.
- Combine honey, brown sugar, butter or margarine, vanilla or almond extract and salt in a medium saucepan over medium heat.
- Cook until brown sugar has dissolved.
- When oat mixture is done, remove form oven and reduce heat to 300F Add oat mixture to liquid mixture, add flax meal and dried fruit and stir to combine.
- Put mixture in the buttered baking dish and press to evenly distribute.
- Bake for 25 minutes.
- Remove from oven and allow to cool before cutting into squares.
- Store in airtight container for 1 week.
