Apple Pie Mini Cheesecakes

  1. Heat oven to 325F.
  2. Mix graham crumbs, 3 Tbsp.
  3. sugar and butter until blended; press onto bottoms of 12 paper-lined muffin cups.
  4. Beat cream cheese, remaining sugar, vanilla and cinnamon with mixer until blended.
  5. Add eggs, 1 at a time, mixing on low speed after each just until blended; spoon over crusts.
  6. Bake 25 to 30 min.
  7. or until centers are almost set.
  8. Cool completely.
  9. Refrigerate 2 hours.
  10. Top with pie filling just before serving.
