Classic Baked Cheesecake
- Base
- 1 cup sweet biscuit crumbs
- 1/3 cup butter, melted
- Filling
- 2 x 250g block PHILADELPHIA* Light/Regular Cream Cheese, softened
- 3/4 cup caster sugar
- 1/2 cup cream
- 3 x 55g eggs, lightly beaten
- 2 tablespoons lemon juice
- 1 teaspoon baking powder
- 1/2 cup cornflour
- Topping
- icing sugar for dusting
- Combine biscuit crumbs and butter, press into the base of a 20cm spring form pan; chill.
- Beat Philly* until smooth, stir in remaining ingredients (caster sugar, cream, eggs, lemon juice, baking powder and cornflour).
- Pour mixture onto crumb crust and bake at 150C for 60 minutes.
- Allow to cool completely in oven and refrigerate for 2-3 hours before serving.
