Beef En Daube Recipe

  1. Cut meat in 1-inch cubes.
  2. Fry bacon till crisp.
  3. Remove from pan.
  4. Pour off all but 2 Tbsp.
  5. drippings.
  6. Brown meat and onions in drippings.
  7. Transfer to crockery pot along with bacon.
  8. Add in vinegar and brown sugar to pan drippings.
  9. Cook 1 minute, stirring.
  10. Pour in wine.
  11. Bring to a boil.
  12. Pour over meat.
  13. Season with salt, pepper, garlic, thyme, stock base and orange peel.
  14. Cover.
  15. Cook on LOW 8 hrs.
  16. Turn to HIGH.
  17. Mix cornstarch with 1 Tbsp.
  18. cool water.
  19. When pan juices are bubbling, stir in cornstarch paste.
  20. Cook, stirring till thickened.
  21. Garnish with parsley.
  22. Makes 6 servings.
