Pistachio Chip Cookies

  1. In a mixing bowl, cream butter and sugar.
  2. Add eggs and vanilla; mix well.
  3. Combine flour, baking powder, baking soda and oats; gradually add to creamed mixture and mix well.
  4. Stir in chips and 1 cup pistachios.
  5. Shape into 1-inch balls; place 2 apart on ungreased baking sheets.
  6. Lightly press remaining pistachios into cookies.
  7. Bake at 350F for 10-12 minutes or until lightly browned.
  8. Cool 2 minutes before removing to wire racks.
