Asparagus and Parmesan Quiche
- 1 unbaked pie shell
- 3 eggs, beaten
- 3/4 to 1 cup cream
- 1 cup shredded Parmesan cheese
- Salt and pepper, to taste
- dash nutmeg
- dash cayenne pepper
- 1/2 cup asparagus, cut into 1-inch pieces and steamed crisp
- Preheat oven to 425F.
- Place beaten eggs in measuring cup and add cream to equal 1-1/2 cups.
- Place in mixing bowl and add cheese, spices and asparagus.
- Pour into unbaked pie shell.
- Bake for 15 minutes, reduce heat to 300F and cook 40 minutes more.
