Fajitas
- 3 lb. skirt or flank steak
- 1/2 c. lime juice
- 1/3 c. salad or olive oil
- 1/3 c. tequila or lime juice
- 4 cloves garlic, pressed
- 1 1/2 tsp. ground cumin
- 1 tsp. dry oregano leaves
- 1/2 tsp. pepper
- 4 to 5 small unpeeled onions, cut in half lengthwise
- 8 to 10 green onions, trimmed and washed
- 16 to 20 flour tortillas
- Salsa Fresca
- guacamole
- sour cream
- frijoles (whole, cooked pinto beans)
- Marinate steak in the next 7 ingredients for 4 hours or overnight.
- Tie green onions together and use as a brush.
- Place meat on grill.
- Baste using the onion brush.
- Cook onions 6 to 8 minutes.
- Cook the meat 3 to 5 minutes on each side.
- Roll onion brush in marinade; grill 3 to 5 minutes.
- Cut beef in strips across the grain.
- Serve in tortillas with beans, salsa, guacamole, sour cream and cilantro.
