Skillet Enchiladas Suizas
- 5 1/2 c. bottled mild green salsa
- 1/2 c. water
- 5 corn tortillas
- 1 lb. frozen peeled medium shrimp
- 2 oz. reduced-fat cream cheese
- 13 c. each shredded Jack cheese and chopped cilantro
- Bring first 3 ingredients to a simmer in large nonstick skillet.
- Cover and simmer 1 minute.
- Add shrimp, cover and cook 1 minute.
- Over low heat, stir in cream cheese until melted.
- Sprinkle with remaining ingredients, cover and cook 1 minute until cheese melts
- No time-consuming filling, rolling or baking required.
