Mushroom-Lemon Filets
- 1 1/2 c. sliced fresh mushrooms
- 2 green onions, chopped
- 2 Tbsp. flour
- 2 Tbsp. fresh parsley
- salt and pepper
- 1/2 c. milk
- 1/2 tsp. grated lemon peel
- 1 lb. fish fillets
- Heat oven to 350u0b0.
- Pam 12 x 8-inch or 8 x 8-inch baking dish. In large skillet, melt 2 tablespoons margarine or use Pam.
- Saute the mushrooms and onions until tender.
- Reduce heat to low.
- Stir in flour, parsley, salt and pepper.
- Cook 1 minute, stirring constantly until smooth and bubbly.
- Gradually stir in the milk. Cook over medium heat, stirring constantly until thickened and bubbly.
- Stir in lemon peel.
- Place fish fillets or pan fish in baking dish.
- Spoon sauce over fish.
- Bake at 350u0b0 for 15 to 20 minutes or until fish flakes with a fork.
- Serves 4.
