Frozen Clover Margaritas for 8

  1. PINEAPPLE ICE.
  2. In a freezer-proof 13"x9" pan, mix pineapple juice and crushed pineapple (with juice).
  3. Freeze overnight.
  4. GREEN RIM:.
  5. Mix 2 parts green decorating sugar to 1 part kosher salt.
  6. Dip rims of 8 margarita glasses into water, shaking off excess; dip into sugar mixture.
  7. DRINK:.
  8. In blender, puree tequila, triple sec and 1/2 cup basil leaves until basil is finely chopped; strain into bowl.
  9. Stir in frozen margarita mix.
  10. Transfer half of mixture to blender.
  11. Break pineapple ice mixture into 1" pieces; add half to blender.
  12. Process until smooth.
  13. Transfer to pitcher.
  14. Repeat with remaining tequila and pineapple mixtures.
  15. Divide among 8 prepared margarita glasses.
  16. GARNISH:.
  17. Garnish each glass with a slice of lime.
  18. Arrange 4 pieces of fresh basil on top of drink so each guest gets a 4-leafed clover.
