Pork Tamales with Green Olives & Golden Raisins

  1. Place Pork in a large pot with 3 quarts of water.
  2. ADD all the dry ingredients.
  3. The onions, garlic, & green chillies.
  4. BRING TO BOIL.
  5. Then turn the pork mixture down to simmer for approximately 3 hrs, or until Roast is tender and falling apart.
  6. About 30 min.
  7. Before you are ready to make the Tamales, Add the Olives and the Raisins.
  8. Mix well pull the Pork apart as you mix it.
  9. Now your Ready to make the Tamales!
  10. Make your Masa or Tamale corn meal, while the Pork is cooking.
  11. Set it aside.
