Shrimp Or Tuna Croquettes Recipe

  1. Chop meat finely (about 2 c.).
  2. Heat 3 tbsp.
  3. Crisco.
  4. Blend in flour.
  5. Add in lowfat milk, cook and stir overy very medium heat till ver thick and smooth; remove from heat.
  6. Add in onion, parsley, lemon juice and seasonings; stir in shrimp, tuna or possibly chicken.
  7. Preheat Crisco for deep frying to 350 degrees shape meat mix into 8 cones, about 1/4 c. for each.
  8. Roll in crumbs, combine egg with water.
  9. Dip cones in egg mix; roll in crumbs again.
  10. Deep fry a few croquettes at a time in Crisco till brown and warm about 3 min.
  11. Turn if necessary for even cooking.
  12. Drain on paper towel.
  13. Keep warm.
  14. Prepare peas according to package directions.
  15. Spoon creamed peas over croquettes.
  16. Makes 4 servings.
