Blender Easy Meat Loaf Recipe

  1. Cut vegetables in big chunks and mince in blender, adding a little cool water.
  2. Strain vegetables and press out moisture.
  3. Add in 2/3 of the can of tomato paste to minced beef.
  4. Add in the chopped vegetables and toss lightly, combining well.
  5. Add in Large eggs.
  6. Shape the meat into an oval loaf and place on a rack in baking pan.
  7. Stir a little water into remaining tomato paste and use this as a baste.
  8. Bake the loaf in a preheated 350 degree oven for 1 hour, basting occasionally.
