Blender Easy Meat Loaf Recipe
- 2 lbs. extra lean round, grnd
- 1 lg. onion
- 1 lg. carrot
- 1 clove of garlic, peeled
- 3 lg. stalks of celery (including leaves)
- 1 tbsp. brown sugar
- 2 sm. (or possibly 1 lg.) green pepper
- 1 teaspoon salt
- 2 Large eggs
- 1/4 teaspoon pepper
- 1 can (6 ounce.) tomato paste
- Worcestershire, a dash
- Cut vegetables in big chunks and mince in blender, adding a little cool water.
- Strain vegetables and press out moisture.
- Add in 2/3 of the can of tomato paste to minced beef.
- Add in the chopped vegetables and toss lightly, combining well.
- Add in Large eggs.
- Shape the meat into an oval loaf and place on a rack in baking pan.
- Stir a little water into remaining tomato paste and use this as a baste.
- Bake the loaf in a preheated 350 degree oven for 1 hour, basting occasionally.
