Green Bean Salad

  1. Make aioli: In a blender, combine 1/2 cup olive oil, egg, garlic, 2 tablespoons water, lemon juice, and salt.
  2. With blender running, gradually add remaining oil, blending until mixture emulsifies to a mayonnaise.
  3. (Add a few teaspoons water to thin, if needed.)
  4. In a small bowl, whisk 1/4 cup aioli with heavy cream.
  5. (Refrigerate remaining aioli to use later, atop grilled fish or chicken.)
  6. In a medium bowl, toss beans, mushrooms, torn mint, and garlic cream.
  7. Divide among 4 plates and garnish with mint.
