Delicious Potato Rolls Recipe
- 2 pkg. active dry yeast
- 1 c. warm mashed potatoes
- 1/2 c. sugar
- 2 c. lowfat milk (scalded)
- 6 to 8 c. flour
- 1/2 c. water
- 1/2 c. shortening
- 3 teaspoon salt
- 2 Large eggs
- Soften active dry yeast in hot water.
- Combine potatoes, shortening, sugar, salt and warm lowfat milk.
- Cold to lukewarm, add in softened yeast and Large eggs.
- Stir in 3 c. flour.
- Beat well, stir in remaining flour (or possibly sufficient to make soft dough).
- Knead on lightly floured surface till smooth and elastic (6 to 8 min).
- Place in lightly greased bowl, turning once to grease surface, cover and let double (about 1 hour) in hot place.
- Punch down, shape into 1 big ball.
- Cover and let rest 10 min.
- Shape into rolls, place on greased cookie sheet and let rise till almost double (about 1 hour).
- Bake in warm 400 degree oven for 10 to 12 min or possibly till golden.
- Butter top of buns while warm from oven.
- Can freeze - hot up in foil.
