Mashed Sweet Potatoes with Goji Berries

  1. Toast walnuts in skillet over medium-high heat 5 minutes, or until fragrant.
  2. Transfer to cutting board, and chop.
  3. Add sugar and 2 Tbs.
  4. water to skillet.
  5. Cook over medium-high heat 1 minute; add walnuts, and cook 5 minutes, or until sugar sticks to walnuts and walnuts are golden brown, stirring constantly.
  6. Remove from heat, and cool.
  7. Cook sweet potatoes in boiling salted water 10 minutes, or until soft.
  8. Drain, reserving 1/4 cup cooking water.
  9. Transfer to bowl, and mash with reserved liquid.
  10. Season with salt and pepper.
  11. Place goji berries in small bowl, and cover with hot water.
  12. Let stand 5 minutes to plump.
  13. Drain liquid.
  14. Heat oil with maple syrup and ginger in small skillet over medium low 2 minutes, or until fragrant.
  15. Add to potatoes, and fold in goji berries.
  16. Season with salt and pepper.
  17. Serve sprinkled with walnuts.
