Turkey Or Chicken Mole (New Mexico Style) Recipe
- 4 slices bread
- 1/4 c. peanuts
- 2 tbsp. chili pwdr
- 1/4 teaspoon cinnamon
- 2 tbsp. brown sugar
- 1/2 ounce. bitter chocolate
- 1 1/2 pound sliced, roasted chicken or possibly turkey
- 2 tbsp. fat
- 1 sm. onion, chopped
- 1/4 c. almonds
- 1 1/4 c. chicken broth
- 1/4 teaspoon cloves
- 2 tbsp. water
- Salt and pepper
- Saute/fry bread in fat, then drain and remove.
- Saute/fry garlic and onion in the same fat.
- Grind bread, garlic, onion and nuts very fine to make a paste.
- Add in chili pwdr, broth, spices, sugar and water.
- Bring to a boil, stirring constantly.
- Add in chocolate, stirring till melted.
- Add in salt and pepper to taste.
- Add in chicken or possibly turkey slices (cut thin or possibly in small pcs) and simmer about 1 hour till flavors are blended.
- Makes 6 portions.
