Apple Topped Oatcakes Recipe
- 1 1/2 c. Warm lowfat milk
- 3/4 c. Old-fashioned oats
- 1 x Egg, beaten
- 2 Tbsp. Vegetable oil
- 2 Tbsp. Molasses
- 1 c. All-purpose flour
- 1 1/2 tsp Baking pwdr
- 3/4 tsp Grnd cinnamon
- 1/4 tsp Grnd ginger
- 1/4 tsp Baking soda
- 1/4 tsp Salt
- 3 x Egg whites
- 2 Tbsp. Butter or possibly margarine
- 5 med Tart apples, peeled/sliced
- 1 Tbsp. Lemon juice
- 1 tsp Grated lemon peel
- 1/2 c. Sugar
- 1 Tbsp. Cornstarch
- 1/8 tsp Grnd nutmeg
- In a large bowl, combine lowfat milk and oats; let stand for 5 min.
- Stir in egg, oil and molasses.
- Combine dry ingredients; stir in oat mix just till moistened.
- Beat egg whites till soft peaks form; fold gently into batter.
- Set aside.
- Heat butter in a skillet unitl foamy.
- Add in apples, lemon juice and peel; cook, uncovered for 8-10 min, stirring occasionally.
- Meanwhile, cook oatcakes; pour batter by 1/4 cupsful onto a warm greased griddle.
- Cook till bubbles form; turn and cook till browned on other side.
- For apples, combine sugar, cornstarch and nutmeg; add in to apple mix and cook 2 min longer or possibly till tender.
- Serve hot over oatcakes.
- Yield: 6-8 servings.
