Potatoes Rellenos Chip Dip #5FIX

  1. Preheat the oven to 350 degrees F. Spoon half of the potatoes into a small casserole or souffle dish.
  2. Sprinkle with half of the chiles & half of the cheese.
  3. Spoon remaining potatoes over cheese & sprinkle with remaining chiles.
  4. In a small bowl beat the eggs until pale yellow in color.
  5. Pour over chiles & bake for 10-15 minutes or until eggs are set.
  6. Sprinkle with remaining cheese & bake for an additional 5 minutes or until cheese is melted & dip is heated through.
  7. Serve with tortilla chips for dipping.
