meatloaf & mushroom gravy
- 1 1/2 lb ground beef
- 2 cup chopped onion
- 1 can mushrooms
- 1 bell pepper
- 2 slice bread
- 1/2 cup milk
- 2 eggs
- 2 tsp dijon mustard
- 1 tbsp veg. oil
- 1 tbsp flour
- 2 cup beef stock/broth
- 1/2 cup ketchup
- 1 tbsp worchester sauce
- in large bowl, combine ground meat, onion (except 2 teaspoons) & seasonings to taste.
- tear bread into small pieces, soak in milk until most of the milk is absorbed.
- in medium bowl, combine bread, eggs, ketchup, Worcester sauce & mustard.
- using hands, blend this mixture into meat.
- put meat mixture in baking dish, shape into loaf.
- bake at 400 f for 1 hour.
- while meatloaf is baking, saute mushrooms & remaining 2 teaspoons of onions in oil until tender.
- add flour & cook till light brown.
- add broth, simmer 10 minutes.
- slice meatloaf & top with mushroom gravy.
