Braised Soy Fish With Mushroom And Bamboo Recipe

  2. Soak dry mushrooms.

  4. Slice bamboo shoots and soaked mushrooms.
  5. Cut scallions in 1/2-inch sections.
  6. Mince ginger root; crush garlic.
  7. 3.
  8. Pick up steps 1, 2 and 4 of Basic Braised Soy Fish (see recipe).

  10. Add in to fish all the vegetables, along with stock, soy sauce, sherry and salt.
  11. Bring to a boil; then simmer, covered, 5 min.
  12. 5.
  13. Add in star anise and sugar.
  14. Simmer, covered, 15 min more, turning fish once.
  15. Serve warm.
  16. VARIATION: In step 4, add in 1/4 lb.
  17. pork with some fat, slivered.
