Pork Satay with Spicy Peanut Sauce
- 2 tbsp. fresh lime juice
- 1/4 c. canned unsweetened coconut milk
- 3 tbsp. creamy or chunky peanut butter
- 2 tbsp. fresh mint leaves
- 2 tbsp. fresh basil leaves
- 1 1/2 tsp. red hot pepper sauce
- 1 lb. pork tenderloin
- 1 1/2 tsp. ground coriander
- 3/4 tsp. salt
- 1/2 tsp. sugar
- 1/4 c. fresh lime juice
- 1 tbsp. sugar
- 1/4 tsp. crushed red pepper flakes
- 1 European (hothouse) cucumber
- 1 red bell pepper
- In food processor or blender, process lime juice, coconut milk, peanut butter, mint, basil, hot sauce, soy sauce, and 1 tablespoon water until smooth; set sauce aside.
- Preheat broiler.
- Cut tenderloin crosswise into thirds (pieces about 4 inches long).
- Cut each piece lengthwise into 1/2-inch thick slices.
- In medium bowl, combine coriander, salt and sugar.
- Add pork and toss to coat.
- Thread 2 pork slices each onto 10-inch skewers.
- Arrange skewers in one layer on broiler pan and broil 6 inches from heat for 3 minutes per side, or until pork is cooked through.
- Serve skewers with peanut sauce and Asian Cucumber Salad.
- For the Asian Cucumber Salad: In 1-quart saucepan, combine 1/4 cup lime juice, 1 tablespoon sugar, and 1/4 teaspoon crushed red pepper flakes and bring to a boil.
- Boil 1 minute; cool to room temperature.
- Add 1 diced European (hothouse) cucumber and 1 chopped red bell pepper, and toss to combine.
- Cover and chill salad until ready to serve.
