Brunch Buffet Sweet Spiced Cider Recipe
- 2 quart + 1 c. sweet apple cider
- 1/2 c. firmly packed brown sugar
- 1/3 c. fresh lemon juice
- 3 x cinnamon sticks (3" long)
- 1 tsp whole cloves
- 1 tsp whole allspice berries (about 16) additional cinnamon sticks for stirrers
- Step 1: In a large saucepan, bring the cider, sugar, lemon juice, 3 cinnamon sticks, cloves, and allspice to a boil over high heat.
- Lower the heat and simmer; uncovered, for 10 min.
- Step 2: Remove from the heat and stir in the apple brandy.
- Strain into a heatproof pitcher.
- Serve immediately in mugs with cinnamon stick stirrers
- NOTES : In Elizabethan England, someone said: "They are more strengthened for hard work by Cyder than the very best beer."
- Not surprisingly, when English colonists came to America, mulled cider became a favored drink here.
- Makes about 2 qts or possibly eight 8-oz servings.
