Carribean Spinach Bisque (Raw)
- 1 cup walnuts, raw unsalted
- 1 head watercress, leaves roughly chopped
- 4 cups Baby Spinach
- 12 cup water
- 12 cup fresh cilantro, chopped (I subbed with mint)
- 14 cup lemon juice, freshly squeezed
- 1 tablespoon coconut oil
- 1 tablespoon gingerroot, chopped
- 12 teaspoon sea salt
- 1 cup peeled diced cucumber
- Pulse walnuts in food processor until completely chopped.
- Add remaining ingredients and mix until smooth and creamy.
- Spoon into bowls and add topping.
- Serve and enjoy!
