Southwestern Chili

  1. Heat the oil in a 4-quart saucean over medium heat.
  2. Add the onion, celery and pepper and cook until they're tender.
  3. Stir in the flour and cumin and cook for 2 minutes.
  4. Stir the stock in the saucepot.
  5. Cook and stir until the mixture boils.
  6. Stir the beans, salsa and chicken or turkey in the saucepot.
  7. Heat to a boil.
  8. Reduce the heat to low.
  9. Cook for 20 minutes.
  10. Garnish with cheese.
