Low Country Shrimp - Pickled Shrimp

  1. Slice onions and soak in cool water for 1 hour.
  2. Cook shrimp, clean and allow to cool.
  3. Drain onions and mix with shrimp.
  4. In another bowl, combine all of the rest of the ingredients; mix well.
  5. Pour ingredients over shrimp and onions.
  6. Marinate in refrigerator for at least 8 hours; better over night.
  7. Drain and serve in shrimp cocktail glasses over shredded lettuce.
  8. Pass the remaining marinade as an option in case one wants more sauce.
