Grilled Zucchini and Squash

  1. Heat the grill to medium.
  2. Slice the zucchini and squash into 1/2-inch-thick slices on the diagonal.
  3. Quarter the peppers; remove the seeds and ribs.
  4. In a large bowl, toss the vegetables with the olive oil; season with salt and pepper.
  5. Grill the vegetables until tender, 6 to 8 minutes per side.
  6. Return the vegetables to the bowl; toss with the basil.
