Chocolate, Fruit and Nut Cookies
- 2 cups whole wheat flour
- 1-1/2 cup quick-cooking oats
- 1 tsp. Magic Baking Powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup non-hydrogenated margarine
- 1-1/4 cups packed golden brown sugar
- 1 egg
- 1 tsp. vanilla
- 3 oz. Baker's Premium 70% Cacao Dark Chocolate, chopped
- 1/2 cup chopped walnuts
- 1/3 cup each raisins and chopped dried apricots
- Heat oven to 375F.
- Combine flour, oats, baking powder, baking soda and salt.
- Beat margarine and sugar in large bowl with mixer until light and fluffy.
- Blend in egg and vanilla.
- Gradually add flour mixture, mixing well after each addition.
- Stir in remaining ingredients.
- Drop tablespoonfuls of dough, 2 inches apart, onto parchment-covered baking sheets.
- Bake 9 to 11 min.
- or until golden brown.
- Cool on baking sheets 5 min.
- Remove to wire racks; cool completely.
