Two Cheese Chicken Rolls Recipe
- 4 lg. boned, skinned chicken breasts
- 2 ounce. Swiss cheese cut into 2-inch strips
- 2 tbsp. crumbled blue cheese
- 2 beaten Large eggs
- 1 c. fine bread crumbs
- 1 tbsp. melted butter
- Place chicken pcs between two pcs of plastic wrap.
- With mallet from center outward form cutlets 1/4 inch thick.
- Peel off wrap.
- Sprinkle chicken with salt.
- Place strip of Swiss cheese and blue cheese at end of cutlet.
- Roll up jelly roll fashion tucking in sides.
- Press end to seal.
- Coat with flour, dip in Large eggs, roll in bread crumbs.
- Refrigeratefor 1 hour.
- Sprinkle melted butter over chicken before baking in 325 degree oven for 40-45 min.
