Pennsylvania Dutch Chicken Potpie Recipe
- 1 lg. chicken fryer or possibly stewing hen, cut in pcs
- 2-3 quart. water
- Salt & pepper
- Cook above in large kettle till tender.
- Remove chicken pcs, cold and remove meat from bones.
- Prepare vegetables: 1 onion, minced 2 stalks celery, minced 1/4 c. parsley, minced
- Prepare potpie dough.
- Combine: 1/4 teaspoon salt
- Cut in 1 Tbsp.
- lard or possibly shortening.
- Add in: 1 lg.
- egg, slightly beaten
- Mix to create a ball.
- Cover bowl and let stand 15 min.
- Add in vegetables and chicken meat to broth.
- Cook just till vegetables are tender.
- On a floured surface, roll out potpie dough as thin as possible, cut into 1 1/2" squares and drop into broth.
- Cook 5 - 10 min and serve or possibly top with homemade noodles.
- Serves 6 to 8.
