Potato Vegetable Fry
- 1 cup white rice (feel free to use other types)
- 1 medium potato
- 14 medium onion
- 1 stalk asparagus
- 12 teaspoon chili powder
- 14 teaspoon black pepper
- 2 garlic cloves
- 14 cup olive oil
- 12 cup water
- Begin to prepare rice according to your preferences.
- Put oil in pan and place on medium heat.
- Slice potatoes into 1/3" slices and place in oil.
- Cut asparagus into 1" sections and place in pan.
- Chop garlic and add to pan.
- Add the rest of the ingredients and mix well.
- Leave on medium heat while rice is cooking.
- Add little bits of water over the next 20 minutes to the vegetable mix to keep moist.
- When rice is finished, place on a plate in a mound.
- Put potato mix over rice and enjoy!
